Huòshān huángyá (霍山黄芽) Yellow teas are the rarest variety of teas that are produced today, though they have been around for over 2000 years. They are similar to green teas but require an additional processing stage where the leaf is piled and covered and kept damp and at temperatures between 77-95 degrees F. This process is called Menhuang, and is a non-enzymatic oxidation process that produces a softer and rounder flavor than green teas and a yellow hue to the tea. The result is a lovely complexity with lots of herbal notes. |
