Sour Shou - A tea based mocktail

For our Sour Shou, we used Shou Puerh as a base, which has notes of peat and vanilla that lend themselves perfectly to a classic Whisky Sour. Makes 2 drinks


1 mini ripe (shou) tuocha 

1 1/2 Tbsp simple syrup (we like to keep this on hand. make with equal parts sugar and water. boil until sugar is disolved)

1 Egg white

1/4 cup Lemon Juice


Lemon and cherry to garnish


1. Brew tuocha in 1 1/4 cups boiled spring or filtered water. Steep for 5 minutes. Using a fine mesh strainer, strain into a heatproof container and allow to cool. 

2.  Pour cooled tea, simple syrup, lemon juice, egg white into a cocktail shaker with ice. Shake until the outside of the shaker feels chilled. 

3. Strain and pour into serving glasses. (on the rocks or straight up -its your preference) garnish with lemon and cherry.
